I only ever use zucchini in caponata / ratatouille
I halve them lengthwise, carve out the seeds, stuff them with shenanigans (rice, pearl cous cous, bacon, etc) and serve them whole...well halved whole after baking them.
Kinda like a stuffed pepper but not. Almost any spoon can gut the seeds so there's really no reason not to stuff it full of delicious stuff and bake it off. Takes like 20 minutes.

I just picked a shit ton of these out of my garden and trying to think of stuff I can make it with it as the base/main ingredient because I have so many and so many more coming in. I swear to god I'm gunna have like 2 huge zucchinis, like twice the size of at the store, everyday. Only think that's really caught my interest so far is zucchini fries and mini zucchini pizzas. The rest I've found seem like too much effort for me (lasagna, bread, etc)
GIVE ME THE ZUCC
- take a courgette
- cut it in half
- carve the interiors (seedy part)
- fill interior with diced mushroom and grated cheese
- salt + pepper + olive oil + herbs
- cover each half with a slice of bacon
- cook in over ~15-20 minutes
