Chicago pizza isn't just deep dish, it's also the classic "Party" pizza which is a broiled thin crust cut in squares, and pan pizza which is a type of double dough. Chicago pizzas are also typically cooked at a higher temperature resulting in a crispy & drier crust than soggy New York cardboard.
