Most restaurants in recipe use a roux and don't make their own sauce. You would be hard pressed to find a place that doesn't use roux.

I'm putting 1 bulb in my next batch of curry. Maybe even 2, I can't get enough garlic. It's horrible raw, but when it's lightly fried it's amazing. I'd put garlic in all my food except desserts.
