Onion for savory fillings, usually plain or cinnamon for sweet fillings but that's because there's a limited bagel selection at my local store

Everything, onion, seen garlic at a few places which was good. I'm not a fan of sweet bagels I always prefer savory. My friends favorite is a blueberry with lox smear which sounds revolting.

You're toasting it for too long then. A light toasting give you a very slight crunch on the surface area (cut in half before toasting, obviously) while still maintaining all the soft deliciousness on the inside.

Basically, as soon as you'd be able to scrub a garlic clove onto it, stop toasting.
