Cold ketchup or room temp ketchup?
Room temperature. I just wait for the water to collect, drink that, and then let a new batch form. Rarely do I eat the catsup itself.

Both have their merits. Room temp for inhanced flavor and complexity or chilled for contrast between hot fries and cold sauce.
