Assuming you live in a decent country, it's close to perfect, but a little under. Rare pork being unsafe is a myth, but I don't like it quite as rare as I do with steak.

Yes. 135-140 is a good temp for a thick pork chop and that looks to be right on the money. Most places that serve pork chops ask for a temp now, so if that wasn't what you wanted that's another matter; but yeah it's edible.
You can choose doneness for good pork just like you would a steak. Pink in the middle is fine. It's up to your personal preference whether or not you want that.
