I've tried quite a few, but my favorite is still Vermont white cheddar, extra sharp. Brie is great, but the flavor is so intense it's not something you want to eat frequently. Good cheddar is just in that sweet spot of intensity. I like it on a wholewheat cracker underneath a slice of grilled Polska kielbasa.
