You don't use it as a cooking oil, its used as a flavoring or dressing.

Pretty much this. It's meant to flavor things. Add it to some noodle dishes if you want, but it really shines through in Korean bapsang, soups, etc. Really, Korean foods are the only things I add sesame oil to anymore.
