I would say that meat and three or barbeque restaurants pretty well define the South. Fried chicken is king in my native GA, but I grew up on pork chops, cornbread, mashed potatoes, and butter beans.

I suppose you could just substitute kangaroo into any beef dish, but kangaroo for the most park is just eaten as steaks/satays here, I assume its because Kangaroo is a super lean meat.

I'm not sure how to describe the taste, but its texture if cooked right isn't as chewy as beef.
On a personal note I have yet to taste ANY meat that is as good marinated as kangaroo, something about its own flavor just plays off marinades perfectly.

Also, crocadile tastes SUPER close to chicken.

Koalas are literally riddled with clamidya and dingos are dogs, no we don't eat them.
The big animals we eat are kangaroos, emus(which are both the animals on our coat of arms) and crocodile.

Kangaroo is super easy to find, like its in any super market over here, wasn't quite like that when I was younger, emu and cros you would probably have to go to a specially store for.

We don't eat bugs, we got yabbies but I think those are just the same thing as crayfish in other places.

Emu steaks are also a thing. Wombat meat needs to be slow cooked otherwise its far too chewy. Platypus is apparently reminiscent of duck. Crocodile tastes slightly like chicken, and looks like white, raw chicken after cooking. These ans insect dishes are limited to boongs. Witchetty grubs are their favourite, which are finger sized morth larvae that taste like almonds when cooked

No sure but I think being bland could be the point of the dish. Norway was among the poorest countries on earth and this reminds of the humble days where black pepper would be considered an exotic luxury. You are right, it does taste good and has much more flavor than one would ever imagine. The dish is called Faarikaal and simply translates to Sheep in cabbage.

Its probably the worlds easiest dish to prepare - add cabbage, sheep, salt, pepper and water into a pot and simmer a few hours ..serve with boiled potatoes :)
