I'm from South Carolina. I've been vegan since I started college, but as a child my mom made a lot of greasy, delicious southern cooking. My favorite meal that she would make was fried gizzards, grits with all the fixings, and fried okra.
I think if I tried to eat a plate like that now, the grease would put me in a coma. Luckily most of my family eats healthier now.

Biscuits and tomato gravy, shrimp and gravy with grits (it's basically the same thing as something from back home, just with different type of shellfish since we use riverprawns instead of shrimp), biscuits and white "gravy," stove top mac and cheese (different recipe for stove top v oven baked; oven baked had eggs in it), cornbread for pork rinds in it, fried okra, pickled okra, shrimp and okra (basically LC simplified version of gumbo), perloo (shrimp and rice with or without okra) and dirty rice (chicken liver, gizzards and boneless thighs ground together and cooked with aromatics and rice). Also fried shrimp.
The family couldn't fry chicken to save their life, though, my ex included.

Roast beef is one of the OG po boys — hell, tourist traps like Mother's sell thousands of them a day, soaked through in "debris" au jus. Lots of high profile restaurants in New Orleans do the same. The original po boy was supposed to be a bunch of french fries on french bread, smothered in roast beef gravy (tho the story supporting this is probably apocryphal.)
A po boy is basically any sort of meat on a french roll, whether fried/grilled seafood, cold cuts, hamburger, fried chicken, or hot sausage (hot sausage is one of my go-to's, being delicious and cheap, but most tourists don't order them.) The huge Vietnamese community in the city sells banh mi as "Vietnamese po boys" and a couple spots like Killer Po-boys even do weird vegan versions. What matters is the bread it's served on. If fried seafood was the criteria then a fucking McFish sandwich would count as a poboy.
The fried oyster po boy is the form perfected tho.
