Is paprika underappreciated?
It's not often I use it in cooking myself unless I'm trying to add a little color. However, tonight I made some paprika chicken filets and have a better appreciation for it now. Paprika is a very subtle spice... but when used in large quantities you can really taste the smokiness and mellow undertones that you typically can't if you're using less than a tablespoon. After tonight I think I'm going to be buying a lot more paprika and cooking with it. You really need large amounts in order to taste it though, but it's an excellent flavor when you do.
Hungarian cuisine uses lots of it, look up the recipe for the original goulasch, it's pretty good
I'm addicted to it, I stuff paprika in practically every "red" dish I make.
Last night I put smoked paprika, onion, garlic, and beef consomme sauce on my burgers and it was actually super good. I've been trying to use up random stuff in my cupboard

Sounds like you're getting stuff that isn't very good or letting it go stale before use. Stale spices are definitely meh, and they almost always go stale faster once powdered.

Does anyone else put a coating of paprika on top when they make potato salad or macaroni and cheese?
My family's always done this, but it wasn't until relatively recently I realized that this might not be normal.
Other spices need to be used in combination to really work, but paprika can stand on its own, if you use it in massive amounts. The subtlety means you need to use large amounts to taste it, but it also means it's dispersed throughout the dish and doesn't overwhelm anything.

A lot of people do not realize this, but paprika is just ground up dried red peppers. Usually it is made from sweet red bell pepper. You also have hot paprika where other hotter red peppers are added. It is also one of the main ingredients used in rubs for quality southern bbq.
