The restaurant usually uses tuna or salmon. we've got stuff like Tomatoes, carrots, cucumber, mushrooms, avocado, potatoes, fennel, lemon,lime, oranges, strawberries. Mussels, lobster, shrimp, scallops, crab meat.

Throw the cucumbers on a mandolin lengthwise, pickle them with a brine that had fennel added to it when you simmer. Save the leaves. You can either add the salmon to this same brine for a short amount of time or keep it as is.
Make avocado mousse, then crumble the pistachios and toast.
Plate a 2 in slice of salmon, add a nice mousse peak, top with some pistachio crumbs and add the cucumber ribbon on top. Garnish with leek greens.

yeah i know, you can make it bitesized if you want to, size is not really a factor. one slice of a yellow,orange,violet carrot would be sufficient for a good visual
