I made Chef John's poke recipe last night and left it to marinate until tonight.
Follow along with my method and then hit up your local asian market for some seaweed. It's totally worth it.

Start out with some short grain sushi rice.
Add a little of AB's sushi rice mixture.
rice vinegar
sugar
salt
toast up some sesame seeds, high heat KEEP THEM MOVING.
I'm serious, KEEP THEM MOVING until they start jumping out of the pan like albino fleas. Then kill the heat and let them rest in the pan on a COLD burner.
Get you some dried seaweed, let it soak for at least 5 minutes. trust me, you don't want to eat this stuff dry.
Slice up some avocado, cubes are nice to eat, but slices look better.
Mmmmm, I can taste the sushi purist's anger from here. Its palpable.

Dice up some green onions. I used an entire stalk because I like vegetables.
