So whenever I make pasta sauce I use italian sausage, and while it's not the worst I'm not a giant fan of the fennel/anise taste. However if I use regular ground beef then the sauce just comes out way to bland. So, do you guys have any tips? Maybe I could use ground pork/veal/buffalo? Or ground beef but add a little bacon/chorizo to it?

Just use ground pork and the spices from a generic Italian sausage recipe minus the fennel and anise.
