I made roasted pork shoulder on Monday. It was a lot juicier in person than it is in the photo.
How do I roast chicken without it becoming dry as fuck. I can roast portions of it without it drying out but I always fuck up roasting a whole one.

Salt it under and over the skin for a few hours.

wrap it in foil and place in lidded stoneware in the oven. let it rest before cutting. ideally you also have water-heavy veggies in there with it.

Spatchcocked chicken, cut out the backbone and splay it out, can also cook it over a bed of veggies. Rub chicken/veggies with oil, season well with salt and pepper. Also buy a good quality temp probe, chicken is done at 165. The chicken will continue to cook while it rests so it's best to take it out a little before that point.
