i bought $500 worth of amazon giftcards from somebody for $200..

i want two knives and some stones, but can't settle on which work horse knife to get. i think 8-10 gyuto style and in the $200-$300 range. suggestions? i don't know shit about steel

a 6k is useless to you right now, build out your set of lower grit stones. something in the 220 range for reprofiling/repair, something in the 500 range for initial setting, 1200 for working edge, 2-3k for finish, and get a lapping plate
