Made icecream as a job once.
There's actually a very specific temperature for ice cream storage (it was something like -14 or -23C. Don't remember specifically), and most freezers are below that point and the icecream gets too hard to scoop and the texture changes. Anything less than that and it's melting, and to vary between the two gives it temperature shock that degrades the quality of the icecream.
Turns out the freezers they serve out of oh so perfectly are at a specific temperature for a reason and if you like icecream more than the average person you should probably just have that freezer so that it always comes out perfectly.
