the point of the drying (and salting) process is that it renders the meat inhospitable to harmful bacteria that you'd expect to find on meat. You can make jerky out of essentially everything if it's prepared and stored correctly.

I used to walk right past that turkey jerky thinking uhh, that shit has been danger zone for how many hours and that it isn't even cooked it'd dehydrated raw poultry.

depens on what temp you make it. You need to quickly get it past 120-130°F because anything under 119 WILL cause salmonella to wreck havoc.
