Depends. Honestly working with Paisa Mexican prep cooks who want to alter the recipe because that's how they used to do it is harder to work with.

I work with a dude in his mid 40's. It's his own business, which means he still has the fire in his belly, and he's the best I ever worked with. He's also a perfectionist asshole who will berate you over the absolute tiniest perceived mistake. He's fucking amazing at what he does, though, so I deal with it, watch, and learn. I don't know if 45 count as "old", but he does have like 30 year experience.
