Would this work in mac & cheese?
No.
Make a mornay sauce.

Yeah, if you're broke as fuck. One time, I combined plain ramen noodles with a Christmas cheese ball. The almonds weren't bad, actually.

I'm going to say it might not be ideal It's probably got some kind of stabilizer in it for the spreadability in that jar, that might do weirdness when heated.
Beer cheese is basically spreadable Welsh Rarebit flavors though, that touch of worchestershire. Try spreading it on warm toast to up your meal-like craving.
Just butter your macaroni, and hit it with some parm. Dinner is done. Or make a bechamel and hit that with some parm. Try toasting some breadcrumbs in butter, for a crunchy topping. I think the worchestershire and beer funk might ruin pasta.
I think it would be alright.
Not ideal, but edible.
What kind of beer would be best to put in mac n cheese? Ipa?

someone needs to eat this and review it here!

Hmm, the bitter herby flavor of hops might actually work in that context. It might contrast the fat and starches well.

Merks is a pretty good party dip, but never used it for melting. Check the label if it has an emulsifier like sodium citrate, if so it'll melt nicely.

I'd love some of that right now.
I know it's the easiest in the world to make, but I adore welsh rarebit nuked and put over some toast when I get some amazing bread from a bakery. Stouffers was mysteriously missing from my entire rotation of grocery stores for like 6 months! I thought it was discontinued. Phew, though. It came back last week. I'm saved. It's onhand again.
