I eat whole wheat bread much more than the other two, usually homemade and unsalted, eaten with oil-free hummuses. Sweet potatoes are mucho yummo :^) but have a short shelf life. Brown rice is usually only eaten here after running out of better stuff. Quinoa is cheap at Costco.

Yeah rice is definitely the first to go. Between wheat and potatoes I'd choose potatoes though. I understand wheat is more nutritional but I can't imagine a world with no more potatoes.
There is still rye, barley, farro and a million other grains. I'm sure we'd be ok without wheat.

I bet you can make flour from potatoes or use to make some kind of breading or noodles combined with other stuff.
You can do the same with rice noodle wise, surely you can change it into breading.
But you cannot make some nice fried potatoes with rice or some potato pancakes.
I would pick potato.

I dunno man. My wife made spaghetti with brown rice noodles and it was surprisingly regular. Probably because it soaked up some butter and marinara just like regular pasta.
I'm still not a huge rice fan, just playing doubles advocate.
