My favorite BBQ in Dania Beach stopped using their smoker and switching to this caja china stuff. The smoke just doesn't permeate down to the bone. Makes a great chicharron and lechon sandwich though, with a lot of mojo and lime, mm. But, I would call it "roast" and not "BBQ"

Pretty exciting was my biggest pig I've done
Usually lamb or calf or 30lbs or less piggy
Easier to cook and more forgiving rare

Looked a right mess, canisters everywhere, kind of like the yard of drunk people the kind that have no air conditioning that are kind of outside too much because it is cooler than their house, you know what I mean, couch on the porch types, ashtrays everywhere.

No offense, OP, thanks for posting, but couldn't you have poured some seasonings in a bowl, or basted with a brush or sprinkled with a spoon. Did you preplan this at all, or was this like someone's family pet potbellied escaped pig that you trapped in your fenced in area just long enough to light the grill and run for your chef's knife?

no, because in america we slaughter and exterminate pigs as rapidly as possible, on sight, and often with automatic weapons mounted on ATV's, pickup trucks, and helicopters.

When I lived in the woods I used an old barrel with the top off and my neighbour's five iron (also with the top off, taped over the end) to cook his dogs over a fire. I used petrol for the flame though and it tasted like shit.

Gradually I stopped being a retard and I actually realised that different types of Oak trees produce different smoky tastes. Pretty awesome with salt, pepper and lemon.
