Which ones do you use and in what food?

I always grind my pepper fresh, desu, but I'm waiting for some of my other spice mills to go empty to I can expand in that department. So far:
>Black pepper for cold dishes and sauces, fine grind
>Black/White mixture for warm dishes, rough grind
>White pepper for warm pepper sauce
I rarely use the last one, mainly because setting the cognac on fire does bear some risk.

I use fresh cracked black for most dishes, but white pepper is required in a lot of different sausages that I make at home. I also use it for curing salmon for lox, chicken salad and tuna salad. I've never used the red or green. I suppose people use them in curries or some shit.
