How do I coat hot rolls evenly with tempura batter and panko? There's always spots that doesn't get coated or the coat is too thick...

I do that but I mix it with an egg beater. The mixture is smooth but when I roll them they never get coated evenly.

Are you making your own tempura batter or some mix? Are you dredging in flour first? Are you using low gluten flour? Are you using seltzer or just cold water?
