I make a dank chili verde with yukons and pazole. Not traditional pazole but fuck it. It tastes good.
Other than that, tomato-coconut milk-red chili paste(Thai).

I really dig cabbage soup. Easy to make industrial quantities, low-carb, cheap, comfy.
