I finally managed a near-perfect KFC chicken recipe. I have three small problems, however.
1. When I fry the drumsticks, about half of them start leaking a lot of blood out. It looks disgusting.
2. The outside is very crispy and tasty, loaded with seasoning. The inside is rather bland and disappointing, it just tastes like unseasoned chicken.
3. My drumsticks are turning a deep purple/black on the inside with a weird texture. It's very off-putting. Looks like pic related but 10x worse.
Here's my recipe.

marinade your chicken overnight with buttermilk and spices. use a bit of cheap powdered ginger.

Also before the buttermilk do an overnight brine in salted water or pickle juice for extra flavour and juice

If you're aiming for KFC styled, then you need to use a pressure cooker to pre-cook the meat before frying it. Not to sure what's used in the brine/ braising liquid though.
