Last time I made ceviche, I did a tilapia ceviche with the usual vegetables but I also added some diced mango because I'm a sucker for mango salsa. Came out really well.
Also, if you can get Persian or seedless cucumbers, go for those. They're not as watery as Kirbies nor English cucumbers and they have a more powerfully cucumber-y taste.

>1/2 pound of shredded shrimp
>1/2 pound if shredded tilapia
Mix in large bowl and squeeze 4 lemons and 4 limes. Let it soak for 2 hours in fridge.

>1 diced cucumber
>1 diced apple
>2 diced tomatoes
>2 diced jalapeƱos
>3 diced avocados
>2 minced single cloves of garlic
>1 half a cup of shredded cilantro
>1 half a cup of shredded carrots
Mix with shrimp and tilapia in large bowl. Put in freezer for 20 minutes so it will be chill. Add salt to taste. Ready to eat. Serve with tostadas and/or saltine crackers. Ketchup and hot sauces is optional.
