I do it by the package, the come out underdone
I wing it, and the only way I can get it cooked on the inside is by lightly charring the outside a bit of the potato, but the vegetables are crisps.
They're never awesome, but I find cooking 20-30% longer than they say and a bit hotter usually works better.
Convection also helps.

O'Briens will take more effort, but its not that hard to make your own hash browns and fries. A mandolin makes it a lot easier
