The most important thing is to remove as much moisture from the potato shreds as you can. To do this you can wrap them up in a kitchen towel and then wring them out. Seasoning can be whatever you like best I guess, doesn't really matter.

Soak them in water for 15 minutes or so changing the water every 5 minutes. Make sure it's cold.
Squeeze out as much liquid as you can in kitchen towel
Don't add too much egg or the mixture will be too liquid to fry
Add enough oil to the pan
