Alright, /ck/. I've got a load of fucking chilies that I need to preserve. Jalapenos, Jalapeno hybrids, Serranos, Pequins, Super Chilies, Locos, Bell Peppers, and several different varieties-- both spicy and sweet-- that I don't even know. What the fuck do I do with these things? In the past I've boiled water + salt + sugar +vinegar and stuck that shit in a jar for a couple weeks, but is that the best I can do? Will that stuff last for a good long time? For years? I'm looking for good recipes that can sit around for a while but still taste good and be eaten pretty soon if need be. Pickling and canning and everything in between. All methods welcome.
