I'm partial to smoked cheddar - hell, any smoked cheese will do, I guess. I'm not too fond of salsa, but a spoonful of guacamole and sour cream on the side can go a long way.

I like to just pour some nachos out on a paper plate and rip up american cheese slices and layer them then microwave it until they all bubble up then let it cool down and eat them. It changes the cheese texture to almost a hard rubber type consistency and sticks to the nachos so you have to pull them or break them apart.

Spicy queso

Pico de gallo and hot sauce, enough to get a taste of each on every chip

Veggies: fresh jalapenos and refried beans are mandatory. Tomatoes and onions are optional if pico is already there.

Meat: I prefer carne asada, but it's personal choice.
