Why are we using yeast in this? Just for flavor? When you roll it that thin there won't be any air pockets that puff up. If so can you omit it, especially if you're not going to cold ferment it in the fridge where any flavor actually develops.

Leb here, that's not what mountain bread looks like at all. Mountain bread is darker brown, and very thin.
