What are you brewing? I brewed 10 gallons of beer in this brew pot that's fermenting in carboys, but I just started this 12 gallons of blueberry wine. I'll let it go for 14 days in open fermentation then lock it away in carboys. 32lbs of blueberries, lol. Always ends up like a good Merlot. Just look at that fucking fermentation in the pic.
I came into a big pile of pears that I can't possibly eat all of, so I found a recipe for very simple pear wine online; just fruit, sugar, a few raisins, and yeast. Waiting for a CO2 valve to arrive in the mail before getting started. OP seems pretty experienced, any advice for a noob?

Not OP here. You don't have brewing stores nearby? You can get a c02 airlock for cheap instead of waiting.

There is one around, never been but heard about it. It was one of those days where I could drive across the city and end up wanting to kill myself or just tack one onto an Amazon order I was just making. I'm going to that store sometime of course when I really get into the brewing thing.
I always keep a gallon of kilju brewing. This has really helped me stop drinking so much. I don't let myself start a new jug until the old one is done, so I'm restricted to only a gallon every couple weeks or so.

I pick my own from a blueberry farm. They cost $2.00/lb that way. Pretty cheap considering it will produce 12 gallons of a wine comparable to a decent Merlot. The other ingredients were 18 lbs of sugar, 4 packets of yeast, some pectic enzyme, acid blend and yeast nutrient.
