Lightly seared on the edges, just enough to make a crust with some crushed black pepper. Serve with a light, homemade sauce. The sauce could be anything you want to taste with the tuna.

Some personal favorites:
-crushed garlic
-chopped and crushed fresh herbs (thyme, basil, sage)
-balsamic vinegar
-juice and fruit from any citrus
-fuck it, juice and fruit from any fruit. Ripe peaches and thyme are a thing of glory.
-anything from your spice rack that would be fun with this

Now, it's best to pick two or three flavors, no more. At four your mouth will just be overwhelmed. Be sure to use the sauce sparingly, so you don't drown out the glorious tuna flavor.
