I prefer to brine my venison in a solution of apple juice, salt, garlic, peppercorns, thyme and rosemary. After a good brine to remove the blood and replace it with flavor I grill it over high heat and finish it with an apple glaze. It adds a lovely but subtle sweetness. I don't recommend cooking it past medium.
