How often should you sharpen the knives?

I think I'm using them too much, I actually sharpen them every 2-3 days for some reason

If your knife needs to be sharpened every couple of days then you have a shitty knife and need to get a better quality one.
A good knife will hold a pretty good edge for about 3-4 weeks. I sharpen at 2.5 weeks though just from habit and my knives are always super sharp

Yea, I have good knives

They hold their sharpness well, however, I didn't know you don't sharpen them after every use

Maybe just use the honer before/after every use and sharpen them once a month??

My Shun knife is really blunt (compared to a new shun) and I only have a honing steel like pictured.

Strop every day and you'll get better results than honing
Just get a decent paddle for stropping with some green compound and you're good.

No. Not even close. If money is tight like in my case, you can pick up pic related for like a tenner. You will only ever use the fine side and they work good enough. Getting a set will be a lot better though.

I sharpen my knives about once a week.

When it's not as sharp as you want it to be and a honing rod doesn't fix the issue.

The bottom of a ceramic coffee cup is a nice cheap alternative to a whetstone
Whetstones aren't that expensive either
Sharpen them every day if you cook professionally, or every time you get annoyed that your knife is too dull

All a honing rod does is put the finishing touch on a blade where the edge is a bit ragged, it will fix a very mild rolled edge and get a sharpened blade to a razor edge but it won't fix dulling
