They harvest the chickens when they pretty young. They are less than 3 months old. They eat mostly a corn / soy protein blend that is dirt cheap when you buy it by the ton.
Basically, chickens are a lot more efficient at turning vegetables into meat than pigs or cows are.

If the chicken was roasted, I'll eat the meat tidbits from the carcass and use the bones for stock. Some of best meat is on the carcass.
