Now is fresh wild caught sockeye salmon season in the US. Yesterday morning I bought a 30lb case flown in overnight from Sam's. Have 8 slabs of lox curing right now in the refrigerator with dill and grated lemon. Smoked enough for canning 16 pints. Grilled some in the evening for dinner and a couple leftover meals. Froze what was left in vacuum packs. Buy fresh now while you have the chance. Frozen tastes like ass.

There is a difference between processed frozen and fresh cut to frozen. Processed ends up being glazed with God knows what to retain color and add weight to it etc. Freezing fresh fish is never ideal but there is a big difference between factory frozen and frozen at home.
