I've tried grilled stingray before
the meat is rather soft, and there are no bones like on your usual fish, their "bones" are layer-like underneath the meat, so the meat can be easily scraped by using a spoon. that's a big plus

it is quite a common thing for stingray meat to taste like piss. this happens because the stingray was not fresh.

Had stingray on a vacation in Singapore. It was seasoned with curry sauce and wrapped in a banana leaf before being grilled. The flesh was mild, white and flaky and there were no bones, only cartilage. You can pick those out or leave them in the fish if you enjoy your fish having a bit of a crunch.
I also had sea cucumber while on a trip to Hong Kong. The sea cucumber itself was tasteless, but it was cooked in a thick sauce made from Chinese smoked ham, chicken, and crab. The sauce was godly on rice, and the sea cucumber was mildly chewy. It didn't have much flavor by itself though.
