For me it's the endive, pickled beet, walnut, goat cheese salad with balsamic vinaigrette.

That's the thing about potato salad: you can add lots of different items, or not, to taste. It's not really special or hard to make, just good comfort food.
That said, I add eggs, pimentos, diced white or red onion, olives, ham, green onion, sweet pickle relish and celery to a mustard and mayo base with plenty of dill and caraway seeds.

For a general go-to salad, Rocket (Arugula) and Watercress, maybe with a little Swiss Chard.

Add some beetroot, goats cheese & walnuts and you have yourself a nice starter, too.
