Sharp blades are a bad thing for a blender. Dull/rounded blades tend to crush the food instead of cutting it. That makes for a finer texture.

You can with a Blendtec, and maybe a Vitamix. Blendtec's pitchers are still poorly designed, even after some revisions, so the blade assembly fails sooner than it should. First one melted its seals and got replaced under warranty. Current one has started leaking lubricant out the bottom. The rest of the blender is great, and third party pitchers with removable/replaceable blades assemblies are available. Blendtec utlrasonically welds theirs in place.
