Wrap it in a slice of bacon and roast it over charcoal
The simpler the better. Rub it with salt and pepper and then grill until up to temp. Might be the poor upbringing but home cooked food just tastes better with fewer ingredients and more care.

Unless you're putting it in an oven, do your best to flatten it, to avoid burning/overcooking or undercooking. It's really easy for chicken to get dried up, so be careful with that shit.
Anyway, you could try Shanghai Chicken, which is basically fried chicken except not as crunchy and with fully different flavors.

Does nobody here brine their chicken?

>when its cooked take it out and shred it
>in a pan fly more tomato and onion slices until really soft (idk the work i aint no chef)
>add chicken and salt then cook for a while
>microwave store bought tortillas
>put chicken in them and roll em up and stick a toothpick through three to make some taquitos
>fry the taquitos
>remove toothpick and put on a plate
>put sour cream, then cotija cheese, salsa (ill give a recipe), shredded lettuce, onion slices, and tomato slices on top
>ladle the broth you made earlier on top

For the salsa
>3 tomatos
>4 or 5 serranos
>1/2 to a whole clove of garlic
>salt after
>boil them in like an inch of water covered
>make sure the tomatos can have a knife easily inserted

Pretty much this. On the off chance i hace chicken breasts i will usually cut it up while its still frozen and cook it with bacon to add on top of some cheese fries when im drunk. Good times
