Shit your Chef has said

I had a Chef once who, when we opened in the morning, got so upset about the poor job the night shift did, that he wrecked the kitchen and made us clean it up. Not long after, I got a new gig as sous somewhere else. I can put up with normal kitchen abuse, but don't go wrecking shit and expect me to clean it up.

yes.. I'm from fucking Belgium. You can NOT get a taco here unless you go a restaurant, and even then you need to go to a 15+ dollar for 3 small tacos kind of semi-fine dining kind of restaurant.

The south-American invasion you have, we have with Arabs from Turkey and Marocco. So we have SHITLOADS of kebab/dürüm places in every town/city but no Taco places.

So I just took one of the most basic but fresh taco recipes, found a way to make it cheaply and am making a fortune because it's considered "trendy" food here.
