Probably because we're a recent colony, and we've become too multicultural to make anything worthwhile.
Culture comes from exclusivity, and we never really got that chance. On the plus side, the quality of our foreign food is pretty good, at least in Melbourne.

There is a bit more variation than british meat and veg kind of cooking though, probably mostly because of long time immigrant groups like greeks and asians, and with being big enough and diverse enough in climate to grow pretty much fucking anything somewhere in the nation.
Aussie does have a lot of interesting wild meats available not just the usual boar or venison or goat or duck but also wallaby, kangaroo, camel, emu, crocodile, buffalo. Some of this you'll find in supermarkets all of this you'll find in more specialty shops.
Also a lot of good seafood since most people live by the coast
