Italian is the best entry level cooking food. It teaches you the fundamentals in simple yet delicious recipes.
It might not be the best tasting overall but it has the best effort to taste ratio by far.

The only difference between Italian food in Italy and Italian food in North America is portion size and use of seasonal ingredients.

The bar is higher, but it's not like you're going to have some vastly greater understanding of it. It's not like eating N. American Chinese food and eating food in China/Taiwan- which are almost unrecognizable from one another.
