This is some Chicken Thigh in Creamy Tomato Sauce and Smoked Applewood Cheese...

Ingredients:
8 Chicken Thigh
8 oz Mushrooms
3 oz Spinach
1 Orange Bell Pepper
1 Onion
3 oz Applewood Smoked Cheese
9 oz Tomato Sauce
6 oz Cream
8 oz Chicken Broth
1 tb minced Garlic
1/2 tsp Rosemary
1/2 tsp Thyme
1.0 tsp Oregano
1/2 tsp Red pepper flakes
1/2 tsp Salt
1/2 tsp Pepper
4 tb Butter
Note: This is the recipe for the pictures below. It came out a little too rich and fat. Next time I make this; I will only use 1.5 oz of Cheese, 2 tb of Butter, and will double the amount of spinach and bell pepper
Salt and Pepper each side of chicken thigh and saute in 2 Tb of Butter on med/med-high for 3-5 minute per side, starting with skin down. Remove chicken from pan
Add Onion, Mushroom, Spinach, Bell Pepper, Garlic, and seasonings to pan. Saute for 10 min on med-high.
Onion and garlic should technically go first, then bell pepper, but I was feeling lazy
Add more butter if necessary
I added too much, as well as too much cheese later so it made the sauce very rich and fatty. Still good, but will cut back next time
Add in tomato sauce, cream, and cheese. Bring to very soft boil while mixing, and simmer on medium for 5 min
Again, this was a bit too much cheese I think for optimal taste
Fully simmered and mixed together

Add chicken back to pan and simmer for 25 min...broil on high for 5 min for extra crispy top

As you can see, it did come out extra fatty due to me using too much butter and too much cheese
It was very good, but heavy/overwhelming after 2 peices....I just wish I knew how to put food on a plate without it looking disgusting

I never understood the tomato issue in cast iron. If it's completely seasoned, then the tomato sauce shouldn't be able to leech on the iron.....

Yeah, in the concentration of tomato sauced used in a recipe like this, it would take days if not weeks for that to occur....and if it did, just reseason.

Looks good to me. Pretty difficult to plate fancy something rustic like a braise with a lot of sauce. The only thing I can think of would be to distribute the mushrooms more evenly on top. Maybe arrange it so one thigh is leaning against another.

Yeah, I know. I just suck at plating even dishes that should be super wasy to make very visually appealing
