For me they need to be mashed. Mashed potatoes are easy to make and hard to fuck up. I also like to sprinkle mexican cheese and a slab of butter on top instead of gravy.
Moreover, skinless is the way to go.
Anyone tried grego's recipe? Is it worth the extra effort?
