I used to but I don't really eat chips anymore, and prefer the crunch from a lot of thinly sliced onion and chopped lettuce. The crunchy vegetables taste better with fatty/salty sandwich fillings too, especially if you put a bit of vinegar on them.

Air. There's no object under it, that's what happens when you try to fry the meat without cutting the rind first. The bubble forms because the interior expands more during cooking than the stiff rind.
