Is it okay to make wine based pan sauces in my cast iron? I've

it isn't a big deal. don't like make a beurre blanc reduction in it but a quick deglaze and mount isn't going to be a problem.

I wouldn't recommend it. I always end up tasting iron ions with acidic shit. ceramic cast iron if you need cast iron.

never made a wine sauce (or sauces in general) in a cast iron, but it's my go-to for everything else - steaks, roasts, bacon, veggies, breakfast, you name it. I find my regular sauce pan more efficient for, well, sauces.
