I recognise the temp controller, I use a similar one on an old fridge that I use for keeping a stable temperature for brewing beer in.

I use mine mainly for sous vide and brew mainly ales. But yeah the set up works really well and is cheap if you already in a slow cooker. I would normally let the whole thing come up to temp before adding the meat but with so much mass I don't think it really matters.

I give them a 6/10. Pretty good but honestly I think this recipe or my methodology is crap. You could bake ribs that are better.
They honestly tasted like BBQ potato chips more than actual bbq.

I used a paprika, salt and molasses marinade while cooking then a general purpose rub before finishing it in a 500 degree oven. Brown sugar, paprika, black pepper, cumin, salt, onion and garlic powder.
